Ingredients
Serves 6
- 1.5 kg (3 lb) oxtail, cut into segments
- 2 tbsp olive oil (or neutral oil)
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 parsnip, diced (optional)
- 1 cup pearl barley, rinsed
- 2 tbsp tomato paste
- 1 can (400 g / 14 oz) diced tomatoes
- 1.5 L (6 cups) beef stock (or chicken stock)
- 2 bay leaves
- 1 tsp dried thyme (or 3 sprigs fresh thyme)
- 1 tsp paprika (optional)
- Salt & black pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Method
Stove‑Top Instructions
Step 1: Brown the Oxtail
- Pat oxtail dry, season with salt & pepper.
- Heat oil in a Dutch oven over medium-high.
- Brown oxtail on all sides (8–10 minutes). Remove and set aside.
Step 2: Build the Base
- Add onions, carrots, celery, and parsnip. Cook 5–6 minutes until softened.
- Stir in garlic and tomato paste; cook 1–2 minutes.
Step 3: Simmer the Stew
- Return oxtail to the pot. Add tomatoes, barley, bay leaves, thyme, paprika, and stock.
- Bring to a boil, then reduce to low. Cover and simmer 3–3.5 hours, stirring occasionally, until oxtail is tender and barley cooked.
Skim fat from the surface while cooking for a cleaner broth.
Step 4: Finish & Serve
- Remove bay leaves and thyme sprigs. Adjust seasoning.
- Garnish with parsley.
- Serve hot with bread, mash, or greens.
Slow Cooker Instructions
- Brown oxtail in a pan with oil over medium-high heat. Transfer to slow cooker.
- In the same pan, sauté onions, carrots, celery, and parsnip until softened. Add garlic and tomato paste; cook 1–2 minutes. Transfer to slow cooker.
- Add barley, tomatoes, stock, bay leaves, thyme, paprika, salt & pepper.
- Cook on Low for 8–9 hours or High for 5–6 hours, until oxtail is fall-apart tender and barley cooked.
- Remove bay leaves and thyme sprigs. Adjust seasoning, garnish with parsley, and serve.
